Ingredients:


2 cups of basmati rice

1 cup of mixed vegetables (carrots, peas, potatoes, bell peppers)

2 onions, finely chopped

3 cloves of garlic, minced

1-inch ginger, minced

1/2 cup yogurt

2 tbsp oil

1 tsp cumin seeds

2 bay leaves

2 cinnamon sticks

3 cloves

3 green cardamoms

1 tsp red chili powder

1 tsp turmeric powder

Salt to taste

2 cups of water

Chopped cilantro and mint leaves for garnish

1/4 cup of fried onions

Instructions:


Rinse the rice in water several times to remove excess starch. Soak the rice in water for 30 minutes.

In a pan, heat oil and add cumin seeds, bay leaves, cinnamon sticks, cloves, and green cardamoms.

Add the chopped onions and fry until they turn golden brown.

Add the minced garlic and ginger and cook for a few minutes.

Add the mixed vegetables and sauté for 5 minutes.

Add the red chili powder, turmeric powder, and salt. Cook for 2 minutes.

Add the yogurt and cook for 2 minutes.

Add 2 cups of water and bring it to a boil.

Drain the rice and add it to the pan. Stir well.

Reduce the heat to low, cover the pan with a lid, and let it cook for 18-20 minutes or until the rice is fully cooked.

Turn off the heat and let it sit for 5 minutes.

Fluff the rice with a fork and garnish with chopped cilantro and mint leaves, fried onions.

Serve the Vegetable Biryani hot with raita or chutney.

Note: You can use any vegetables of your choice and adjust the seasoning as per your preference. You can also add cashews, raisins, and saffron for added flavor
