Ingredients:

4 boneless, skinless chicken breasts
Salt and pepper, to taste
1/2 cup almond flour
2 tablespoons olive oil
1 lemon, zested and juiced
1/4 cup chicken broth
2 tablespoons butter
2 cloves garlic, minced
2 tablespoons chopped fresh parsley

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. Season the chicken breasts with salt and pepper.

  3. Place the almond flour in a shallow dish and coat the chicken breasts in the flour.

  4. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 2-3 minutes on each side, or until they are golden brown.
  5. In a small bowl, whisk together the lemon zest, lemon juice, chicken broth, and butter. Pour the mixture over the chicken breasts.
